After I posted the how-to melt chocolate the right way post I have been getting a lot of questions on which is the best chocolate for baking in India and where to find it, and rightly so.
There are quite a few brands and that makes the choice tough. Plus, you also need to decide whether you want to work with dark, brown, white or premium couverture chocolate.
To make that decision easier, in the article, I am going to tell you all about how to buy and where to buy chocolates in India.
1. Understand chocolate
Many of you may not know this but chocolate is also known as the ‘food of gods’ and in ancient times was reserved only for special guests and soldiers during the wars. This because chocolate had shown to have invigorating properties and helped the injured recover faster from injuries.
At your nearby supermarket, you can find chocolate in 3 forms namely, dark, white and brown. Each of these chocolates is different in their composition and I am going to tell you all about that below.
2. Know about the various types of Chocolate
The main ingredient that gives the chocolate its flavor is Chocolate liquor which is made by grinding cacao pods while the cocoa butter in the chocolate is responsible for the glossy texture. Cacao is bitter in taste and this why couverture chocolate is actually bitter. So when working with, make sure to balance the taste.
3. White Chocolate
This may hit you like an unexpected punch in the gut but white chocolate isn’t really chocolate at all (well, at least not technically). That is because white chocolate does not have any cocoa. White chocolate is made by combining together milk and sugar with cocoa butter.
This is the reason white chocolate is sweet and is quite creamy. Brown chocolate also has milk solids in it though way lesser than that compared to white chocolate. It also has Cocoa giving it a balanced taste.
On the other hand, dark chocolate has zero milk solids. In fact, it is almost 80% couverture which is why it tends to be bitter. but the lack of sugar or milk means it is also very healthy. If you are making a dessert for someone with diabetes or on a diet, dark chocolate is a no-brainer.
Baking with Chocolate
If your baking recipe calls for chocolate, it usually means baking chocolate. Now, what is that? Well, this kind of chocolate is 100% cocoa and thus has the most bitter taste. It is often used in the baking of chocolate brownies and cakes.
This works really well since you already add sugar to the batter. Adding the chocolate balances the flavors. But if you are baking cookies then you would want to stick with dark chocolate chips as they melt quickly.

There are 4 brands that dominate the Indian market in the case of chocolates. These are:
